Extra Help, Please

It is supposed to be h-o-t next week.  It's time for me to do my meal planning, and I'm trying to keep the temperature in mind.  Like most, our house really heats up with cooking.  I'd like to keep the inside temperature lower than the outside temp.  We have no problem with sandwiches and salads, but I can only do that for so long before I get bored.  What are some of your favorite summertime meals?  And while we're at it, do you have a favorite summertime drink?  I'll share some of my summertime standby drinks tomorrow.

Steaks on the stovetop marinated in Balsamic vinegar with a bit of salt, pepper and garlic. Usually with rice or potatoes (from the can....my favorite!)

Calzones, though that puts the oven at 350 for about 40 minutes. Roll out your pizza dough, layer with cheese and lunchmeats, whatever, roll up jelly roll style and bake on cookie sheet.

I can't think of a single recipe I make that doesn't involve heating up the house. I'm wracking my brain, but really, they all involve the oven and hot stove. I do make a good chopped blue cheese salad, but I cook chicken for it.

We also eat wraps a lot. Where I buy a bag of tortillas and we assemble our own. I like mine with chicken, feta cheese, lettuce, greek dressing and whatever else we might have the house that goes. Hubs like his with provolone, chicken, lettuce and ranch dressing.

Once they're put together I put them on a hot frying pan on the stove (no oil or butter on the pan) and leave them there long enough to crisp up the tortilla and melt the cheese.

My spicy Southern shrimp take about 10 minutes on the stove top (click on "recipe" label on the side of my blog, it will take you to all my recipe posts)

Grilling is always my favorite summertime method of cooking- (marinated pork tenderloin? barbeque chicken?)

Pasta & stovetop pasta sauce- check out the Pioneer Womans shrimp & penne pasta (oh so good) and of course you can always boil a box of angel hair , put it in a saute pan with olive oil, 3 cloves of diced fresh garlic & a shake or two of hot red pepper flakes- saute for five minutes & enjoy. Delicious!

I'm a huge fan of my crock pot, which doesn't heat up the house at all. Then I can just use the microwave to heat up leftover for a couple of days.

Tho when it's real hot I don't feel like eating much. Tuna sandwiches are a staple these days, LOL. I'm also a huge fan of pasta salads, in fact I'm probably going to make one today. I just bought a new basil/balsamic vinagrette I'm hoping will be awesome.

How about pasta salad...only boiling water and fresh crisp veggies from the store (better the second day). If you buy the fresh pasta (it only takes a very short amount of time to cook).

A baked potato bar...microwave them and have a bunch of toppings to select from and a cool, crisp, fresh salad.

Tuna or chicken salad (purchase one of those precooked chickens from the store and you can make several meals aside from the TS from just one; even add it to the pasta salad).

Do any of these sound feasible?

And by the way, Linus is a hoot. As a teacher for 15 years (teaching everything from K-5) she is just the kind of student that I would love in my class. I would love a class full of LLIINNUUSS'
